THOMAS GANCIA BOULANGER
Born in Nantes, he created an unusual career path for himself. After studying history and business school, Thomas discovered cooking by chance... and never left it, a true passion for him .
Trained in prestigious establishments such as Domaine de Verchant and Gaëtan Gentil, before returning to the Côte d'Azur, he developed a clear, sincere cuisine, driven by the right sauces and flavors .
At Lattara, he creates a menu that is both technical and comforting , inspired by gastronomy, but designed for simple pleasure.

ALEXANDRE GRIMAUD
A passionate restaurateur and host at heart, Alexandre Grimaud has been promoting his vision of hospitality for several years, combining excellence in service and attention to detail.
A native of Montpellier, he embodies this alliance between local roots and international expertise.
After a rich career in luxury hotels from Australia to Switzerland, via Ramatuelle, Val Thorens and even Paris at the Plaza Athénée.
With years of experience in prestigious establishments such as the "JIWAN" restaurant, which he managed for Chef Alain Ducasse during his last football World Cup in the National Museum of Doha in Qatar, he brings unique expertise to the project.
He returns to his homeland with a clear ambition: to create his own address. A place in his image, elegant, lively, and deeply human, inspired by the beautiful Parisian brasseries of yesteryear.
Thus was born Lattara, a nod to its origins, but also to the region's ancient history. More than a chic brasserie, Lattara is designed as a place for sharing and storytelling, where people come to eat well, drink well, and experience life for a while.
